Recipe of the Week – Pumpkin Spice Chia Pudding

This recipe for a Pumpkin Spice Chia Pudding is the ultimate autumnal breakfast. Unlike the famous coffeehouse pumpkin spice latte, this recipe isn’t full of unhealthy, sugary syrups but actual fresh spices and pumpkin puree. Chia seeds are full of proteins, fibers, and omega-3 fats. The seeds are great at absorbing flavors, including these autumnal spices. This recipe is super easy to make in either a single serving or a big batch.

Ingredients

180 milliliters of full-fat coconut milk
65 grams of Pumpkin Spice Paleo Pro Protein Powder
65 grams of Paleo Pro Recovery Powder (These are air dried sweet potatoes)
2 tablespoons of chia seeds
225 grams of pumpkin puree
1 teaspoon of maple syrup
1/2 teaspoon of ground cinnamon
1/4 of teaspoon ground ginger
You can add some stevia (sweetener), to taste

Instructions

1.   Add all of the ingredients to a high-speed blender. Blend until smooth and creamy.
2.  Pour the mixture into mason jars or bowls and refrigerate overnight to thicken.
3.  Enjoy your delicious Pumpkin Spice Chia Pudding breakfast.

As an extra you can add even more flavor to your pudding by topping it with coconut chips, almonds and pumpkin seeds.
